Work has been under way for some time on the new downtown Franklin location of the Grilled Cheeserie restaurant, with an opening expected later this spring.

Located at 334 Main St. near Grays on Main, the Franklin restaurant would be the second bricks-and-mortar shop for the eatery that began and still operates as a food truck.

The Franklin Home Page hasn’t yet heard back from the owners — husband and wife Joseph Bogan and Crystal De Luna-Bogan — for more details, but an employee did say the restaurant is expected to open around mid-April. He said a shop is also planned for East Nashville.

The Grilled Cheeserie announced in December 2017 it was opening in Franklin. A building permit was recently posted in the window of 334 Main St.

Bogan and De Luna-Bogan began the Grilled Cheeserie food truck in 2010 on Belcourt Avenue in Nashville.  It has since become one of the more popular of the many food trucks that can be found at festivals, events and other outdoor activities.

The Grilled Cheeserie serves up “gourmet grilled cheese melts and nostalgic treats featuring seasonally inspired, responsibly sourced products,” according to its website. “Crystal’s extensive culinary background, including such fine-dining restaurants in Southern California as Napa Rose, The Four Seasons Hotel Beverly Hills and Clementine, has helped mold her into an elite chef with a developed understanding of flavor profiles.

“Joseph and Crystal’s love for their planet motivates them to use eco-conscious business practices with their sights set on getting to a “zero waste” status. They also view their business as a platform to help educate people on the importance of knowing where your food comes from.”
